Pistachios are nutrient-rich seeds containing high levels of unsaturated fatty acids, protein, fibre, vitamins, minerals and antioxidant plant compounds. They are particularly rich in vitamin B6, thiamine, copper and manganese, while also providing significant amounts of potassium, magnesium and phosphorus. Pistachios are also particularly rich in the carotenoids lutein and zeaxanthin among nuts. These compounds contribute to antioxidant cellular protection and support the cardiovascular system, nervous system, metabolism, digestion and eye health.
Notes
Pistachios have a high nutrient density. A portion of around 30 g provides approximately 3 g of fibre and significant amounts of vitamin B6, copper, manganese, potassium and magnesium. Lutein and zeaxanthin make pistachios particularly relevant for eye health. Unsalted and minimally processed pistachios are preferable.
